Yes, kale chips!

If you’re new to thinking homemade cheap and easy kale chips should be something that’s worth your time, then you are SO in the right place.

Pull up a chair.

WHY HOMEMADE CHEAP AND EASY KALE CHIPS?

1. They hit more than a few wellness high notes.

Kale chips are loaded with antioxidants. They’re anti-inflammatory. They help to boost your immune system and they have lots of fiber to help you feel full (and uh, to help you get empty when the time is right). wink

2. When we bake chopped kale leaves with fun flavorings, we can transform them.

(Think Popeye’s mean, old uncle morphing into Spider-Man).

We can turn those too-good-for-you-to-be-good leafy greens into a healthy and satisfying low-carb, crunchy snack that’s a billion times healthier than their evil cousin, the inflammatory oil-laden potato chip.

3. They’re a whole lot cheaper than the ones we find in the store, with an ingredient list that we’re in complete control of.

For example, a two-ounce bag costs about $4-5 bucks and many brands also contain added sugar.

So without any further adieu, let’s bake some kale, baby!

1. Preheat oven to 350 F.

2. Line a sheet tray with parchment paper or a silicone baking mat.

3. Place approximately one bunch of pre-washed, dried and roughly-chopped kale leaves onto the sheet tray and spray with coconut oil spray or drizzle with 1-2 tablespoons of extra-virgin olive oil.

4. Sprinkle generously with sea salt, pepper, garlic powder and grated Parmesan cheese (or nutritional yeast).

5. Bake for 15-20 minutes or until a little crunchy.

6. Let completely cool before serving.

And that’s it! Super cheap and easy, right?

For more variation, experiment with other seasoning blends (like chipotle powder to kick up the heat)!

All that nutritional goodness will get you about 2g net carbs and 130 calories per 4 oz. serving.
